Rice Vermicelli Upma

I had accidently brought a pack of MTR rice vermicelli. I had been making the refined flour variety and also the whole wheat flour variety of the same brand over the years, but some- how i had missed the rice variety one.

I just thought, ‘it’s vermicelli only, how different will it be’ …..Ohh ! Boy !! i was in for a surprise πŸ˜‰ firstly, it does need to be boiled a couple of mins longer than wheat ones (al dente), secondly, its much lighter on the palate. πŸ™‚

Having said that, my first attempt to make this ended up in the trash πŸ˜›

Now i have purrrrrrfected the art of cooking it πŸ˜‰

This is also one of the smart way to feed a fussy teenager πŸ˜‰ How smart, i will tell you πŸ˜›

Picture 136kids never like vegetables, so add finely chopped varieties of veggies, and make the upma moderately spicy and lemony and Bingo !!!!

Since Pakhi loves eggs cooked in any form, i topped it with a boiled egg πŸ˜‰

She is no fool and tells me that i am a crafty mom πŸ˜›

RICE VERMICELLI UPMA

For 2 Β person

Ingredients :

1 cup – MTR rice vermicelli

1 cup – finely chopped vegetables of one’s choice( bell peppers, broccoli, potatoes etc)

1 tbsp – finely chopped onion

1 tbsp – boiled peas

1 tbsp – boiled sweet corn kernel (optional)

1 nos – finely chopped green chili

1 tsp – chopped coriander (for garnish)

1 spring – curry leaves

Pinch of black mustard seeds

2 eggs – soft boiled and sliced into four(optional)

Juice of Β½ a lime

Salt to taste

1 tbsp – oil for cooking

Method :

Boil the vermicelli as per the instruction on the pack with a tsp of oil. Drain the vermicelli in a colander and pour cold water and drain again. Keep aside.

In a wok heat oil , temper with the mustard and curry leaves. Add the onion, fry for a minute. Add the chili , fry for another min. Now add all the chopped vegetables, peas and sweet corn and some salt. Fry on medium flame. Vegetables should retain some crunchiness.

Add the vermicelli, increase the flame and add the salt. Gently stir , check for salt. Add the chopped coriander and lime juice, give it a stir and take it off the flame.

Garnish with sliced boiled egg. Sprinkle some roasted cumin and black pepper powder on the egg slices.

Serve hot.

 

We, the moms, have to be smart and a bit crafty from time -to- time to feed our fussy kids, but then that is what i exactly recall about my mom πŸ˜‰ πŸ˜€

  1. I love Upma and I make half and half sometimes, mixing rawa and vermicelli together. Yours is a great idea to top with eggs. I love eggs too πŸ˜‰
