Pickled Cucumbers

I have fond memories of my first Subway ❤

I realized that there are many different kind of sauces besides the tomato and mustard 😉 and also there are few things called pickled onion, cucumbers etc.

I always loved those sweet n sour pickled cucumbers and wanted to make some at home. Those many years back I had no internet access at home :/ and none of the recipe books i owned had any mention of such a pickle. So i waited more than six years to make the first batch of pickled cucumbers. 🙂

Since then it has been an experiment ground of pickling cucumber with a variety of flavors !!! The one i am posting here is my favorite- simple and easy, cool and crunchy 🙂

Pickled cucumber

INGREDIENTS

4 nos – small sized cucumbers

1 1/2 tsp – peppercorns

1 tsp – salt

1 tsp – sugar

3/4 cup – cider vinegar

3 nos – garlic pods (peeled)

1 tsp – chili flakes

3/4 cup – water

METHOD

In a pan put water, vinegar, salt and sugar to heat. Take it off the flame once sugar dissolves. Allow to cool.

Slice the garlic pods into halves. Keep aside.

Wash and wipe the cucumbers and slice them diagonally or slice it thin, as per choice.

Toss the cucumber slices, garlic, peppercorns and chili flakes. Jar them. Pour the vinegar mix over it.

Cover and refrigerate. The pickle will be ready in two days to consume.
