Since i am updating the blog from my archived recipes, here a mouth -watering street food from Kolkata 🙂
I am a ‘probashi’ Bengali, but Egg rolls and Kolkata runs in every Bongs blood wherever they might be 😉
This is my first attempt at making egg rolls from scratch, by which i mean from kneading the dough, rolling etc. Readymade rotis are available in any big store, but i thought i’ll give my arm some exercise 😉
Sometimes we surprise ourselves and that’s what exactly happened today.. i surprised myself with the outcome 😀
Rolls were tangy, juicy, spicy with an overwhelming aroma of Kolkata !!!!
Then i was lacking in lots of aspects such as photography and finesse, which I am learning more and more 🙂
Making rolls are easy, only the process is a bit long drawn.
Here’s what i did………
INGREDIENTS
Makes 5-6 rolls
5-6 eggs
1 cup- finely chopped/grated/julienned cucumber
1 cup -finely chopped/grated/julienned carrot
1 cup -finely chopped (length wise) red onion
1 tsp -finely chopped green chillies
½ tsp- roasted cumin powder
Chilli sauce (as per taste)
Tomato sauce (as per taste)
Hot peprico sauce (optional)
Salt to taste
Oil to fry
For the dough :
1 ½ cup -refined flour
¼ tsp -salt
1 tbsp -ghee/oil for the grease ( mowan)
METHOD
Knead the dough keeping in mind it shouldn’t be too soft, because then it will be difficult to roll out.
Cover, keep aside for 10 mins. Squeeze the water from the cucumber and carrot. Mix cucumber, carrot, onion and green chillies. Keep aside.
Beat an egg with a pinch of salt. ( beat individual eggs for each roll). Keep aside
Sprinkle some flour and roll out the base(roti), little larger than our regular roti, as thin as possible. Thinner, the crispier. Prepare and roast a batch of base.
Now in a non stick or a flat pan, heat ½ tsp of oil and pour the beaten egg. Swirl the pan so the mix spreads out, lower flame, and keep the roti base on it (refer pic for help). Brush some oil on the roti, flip it over. Let it cook well. Take off the heat. Prepare all the rotis and spread it(egg side up) on a clean board or surface.
Sprinkle some roasted cumin powder. Arrange the vegetable mix. Sprinkle some salt (if needed). Sprinkle all the sauces as per liking/taste.
Spread some foil or kitchen paper , roll the base and wrap it up from one end.
Serve hot.
