Oreo it seems has captured the human imagination, internationally, irrespective of their age 😉 My kid has been after me for long to make something out of Oreo. Since i have been unwell for sometime, nothing was coming to mind
To uplift my own mood and surprise Pakhi, i thought of making something quick and simple with her much loved Oreo ❤ .
It is also Teacher’s Day tomorrow, and school is taking us , the staff, for a movie, which i am not looking forward to due to my health and also the lead actor 😦 . So to cheer myself up, i thought to bake a cake.
Weather has been co -operating, lately 😉 Rain and cool breeze…..perfect reason to bake. 😛
Baked a simple chocolate sponge cake and covered it up with Oreo frosting and some cream cheese to garnish 😉 😛
Frosting could have been better if my health allowed me some patience but the end result……..Fantastic !!!! 😀 Pakhi happy, mumma happy 🙂
Here’s what i did……….
INGREDIENTS
For chocolate cake check out here for the details
For the Oreo frosting :
1 1/2 cup – heavy cream
15 nos – Oreo cookies + 4 for garnishing
2 tbsp – granulated sugar (powdered)
1/4 tsp – vanilla essence
1 tbsp – cream cheese
2 tsp- granulated sugar (powdered)
METHOD
Bake the cake and cool on a wire rack. Meanwhile prepare the frosting by beating the cream, vanilla and powdered sugar till soft peaks are formed. Refrigerate.
Gently cut 4 Oreo cookies into half. Keep aside.
Whisk the cream cheese with the sugar till peaks form. Refrigerate.
Process 15 Oreos in the food processor. Keep aside.
Once the cake has cooled, string it. Preserve 2 tsp and fold in rest of the crushed Oreos into the whipped cream. Spread about 1/2 of this on the bottom layer of the cake. Top it with the other cake layer and refrigerate for 30 mins. This will allow the oreos to soften. Take the cake out of refrigeration and coat it with the rest of the cream.
Remember the frosting will be uneven because of the crushed oreos. Refrigerate again for 30 mins.
Now for the final garnish, stick the preserved crushed oreo to the cake sides.
Pipe in the cream cheese rosette style or any other style you prefer. Garnish with the oreo halves.
Serve.
