Chicken was never an often cooked food in our household. My father never ever touched or tasted chicken. Cooking chicken at home was a big hassle for mom, because Bapi (father) will not eat anything touched by it. So mom usually used to cook it on a separate stove and separate utensil. That day Bapi will not lunch or dinner with us. Hence, chicken was a rarity in our family cuisine.
May be because of this, I and Bhai (younger brother) never did fell for chicken much. We are more into mutton or mince, fish and eggs 😉
The same trend carried on and passed on to Pakhi. She loves non -vegetarian food, but less inclined towards chicken. Therefore, chicken is not a rarity but seldom cooked in my kitchen. 🙂
I had been wanting to try Koli masala (spice) with chicken for a long time. I had tried this spice in stir -fry vegetables, spicy prawns and now was the turn of chicken. 😉
Cooked it in handi = heavy bottomed pot, with no water 😀
Here’s what i did…………………
INGREDIENTS
500 gms – chicken
For the gravy :
1 nos – large sized oinion (paste)
1/2 tsp – coriander powder
1/2 tsp – tumeric powder
1 tsp – kashmiri red chili powder
1 tsp – ginger paste
1 1/2 tsp – garlic paste
1/4 tsp – black pepper powder
1 tbsp – koli masala (spice)
1/2 tsp – garam masala (Indian all spice mix)
1/4 cup – yoghurt
1 tsp – finely chopped green chili
3 tbsp – oil
For tempering :
1 nos – bay leaf
1 nos – small cardamom
1 stick – cinnamon
1/4 tsp – cumin seeds
pinch of roasted sesame seeds to garnish
METHOD
Marinate the chicken with yoghurt, 1/4 tsp ginger paste, 1/2 tsp garlic paste, salt and finely chopped green chili for an hour.
Heat oil in a handi. Temper with all the spices listed under Tempering.
Add the onion paste and fry till translucent. Add the ginger and garlic paste and fry for a few mins. Add the chicken and all the spices listed under Curry (including the garam masala). Season with salt. Lower the flame and let the spices infuse their flavor and aroma into the chicken. Give a stir.
Add the Koli masala.
Cover and cook the chicken. Give an occasional stir from time to time.
It will take approximately an hour for the chicken to cook through.
Serve hot with sesame garnish with some hot naan or chapati.
