The concept of salad changes from region to region, in a country and around the world. Salads are regular feature and usually served as a side dish in Indian meals.
I do a variety of salads. Will be listing a few here under ‘Salads’.
Starting the series with a ‘tumbler full of veggies and some fruits’ ๐
Salad are easy, simple, crunchy, healthy and has scope for limitless imagination and innovations ๐ Can be a meal by itself or served with a meal. At my place, it is usually served with a meal. ๐
This salad is made up of cucumber, onion, carrots, black olives, guava, some cilantro with a vinaigrette dressing.
Here’s what i did……..
INGREDIENTS
For the salad :
2 tbsp – finely chopped (in sticks) cucumber
2 tbsp – finely chopped (in sticks) carrots
1 tbsp – finely chopped onion
2 tbsp – finely chopped (in sticks) guava
1 tbsp – black olives
1 tsp – finely chopped cabbage
1 tsp – finely chopped cilantro / fresh coriander
pinch of dried oregano
1 tbsp – vinaigrette ย dressing
For a simple vinaigrette dressing :
1 tsp – worcestershire sauce
1 tsp – white wine vinegar
1 tbsp – EVOO (extra virgin olive oil)
1 pod – garlic (roasted and crushed )
1 1/2 tsp – honey
1/4 tsp – dried onion powder (optional)
pinch of black pepper
pinch of salt
pinch of dried oregano
METHOD
Mix all the ingredients listed under salad in a large bowl. Prepare the dressing by whisking together the oil, vinegar and the sauce at room temperature. Add the other ingredients and whisk again. Use a tbsp of this dressing and store the rest. You can keep the dressing refrigerated upto a month.
Toss the salad well. Sprinkle some salt, cilantro and dried oregano (optional).
Serve.
