Simple and protein and fiber packed salad !! 🙂
Easy to assemble and it is usually my complete lunch, thrice a week.
I eat this salad so often, that my mom has started calling me ‘lazy bum’ 😛 Her generation thinks till you do not have a plate loaded with food, it’s not food. 😀
Presenting here the Chickpea salad from the Platter of Madness.
Here’s what i did………
INGREDIENTS
1 cup – boiled chickpeas
1 tsp – finely chopped onion
1 nos – green chili (finely chopped)
1/2 cup – cucumber (chopped into small cubes)
1 tbsp – finely chopped tomato
1 1/2 tsp – lime juice
1 tsp – olive oil (evoo)
some finely chopped fresh cilantro/ coriander (optional)
salt to taste
pinch of black pepper
METHOD
Toss all ingredients together with olive oil. Chill for 30 mins. Season with salt, pepper and lime juice.
Serve
