I have seen, tasted and made so many different types of stuffed tomatoes, but this one is mine and Pakhi’s favorite π
Since it’s a known fact how troublesome it is to feed children vegetables, mothers around the world have been innovative, inventive and sneaky π I am no less π And the task becomes trickier, if your kids are teenagers, where they have an evolving taste bud and a mind of their own !
Hence, a continuous and serious effort to make vegetables attractive, tasty and not forgetting the health quotient.
Stuffing can be variant, innovative and healthy. I stuffed the tomato with mince meat and egg. This is also a good use of leftovers. π This can be served as a starter too.
Here’s what i did………
INGREDIENTS
2-3 nos – large tomatoes
1/2 cup – cooked mutton mince
2 nos – eggs
3 slices – bread
pinch of black pepper powder
pinch of dried oregano
salt to taste
METHOD
Pre- heat oven to 180 degrees C.
Cut a slice from the top of each tomato and carefully scoop out the pulp. Reserve the pulp for making any gravy preparation. Rub some salt inside the tomatoes.
Put some mutton mince into each tomato. Beat the eggs well with salt, black pepper and oregano. Pour the eggs into the tomato shells over the mince. Grease a pie or a tart dish and place the stuffed tomatoes into it.
Replace the tomato slice on the tomatoes and bake for 10 mins.
Apply butter on the bread slices and toast them to your favorite level of crispiness. Cut rounds of toasts larger than the tomatoes and place them under each tomato.
Serve garnished with a sprig of fresh coriander or parsley.
