I cook a lot of traditional food, but I am not a traditionalist πŸ˜€ My mom remains confused over this statement of mine πŸ˜‰

According to her, traditional sweets and snacks should and will be made during festivals. I disagree πŸ˜‰ But i did promise her, that i would make something traditional, too πŸ˜€

Kicking off this Festival of Lights – Deepavali, with a gooey and sinful, non -traditional, mocha cake with buttercream frosting !! ❀ Coffee and chocolatey rich cake!

Here’s what i did……………

INGREDIENTS

Makes 12 cupcakes and 2 individual cakes

For the cake/ cupcakes :

1 3/4 cup – all purpose flour/ maida

3/4 cup – vegetable oil

2 cups – granulated white sugar

3 nos – eggs

1 tsp – baking powder

1 tsp – baking soda

1/2 tsp – salt

1 cup – unsweetened cocoa powder

1/2 cup – strongly brewed filter coffee (cooled)

1/2 cup – milk

1 tsp – vanilla essence

2 tbsp – chopped chocolate

For the frosting :

1 cup – unsalted butter at room temperature

2 tbsp – heavy cream

3/4 cup – icing sugar

1 tsp – strongly brewed filter coffee (cooled)

1/2 tsp – chocolate sprinkles

few drops of vanilla essence

METHOD

For the cake :

Sieve the flour, cocoa powder, baking soda and baking powder. Keep aside.

Powder the granulated sugar for easy mixing.

In a mixing bowl, add the oil, and sugar and beat well. Beat the eggs and add to this mix. Once the mix has been well mixed, add the brewed coffee and milk. Beat again for 3-4 mins.

Add the flour mix 1 tbsp at a time and keep folding it in with a wooden spatula. Once all the flour has been folded in, add the vanilla essence and the chopped chocolate.

Preheat oven at 180 degrees C and bake the individual cakes together or separately for 18 mins.

Cool the cakes on a cooling rack.

For the buttercream frosting :

In a medium sized bowl, whip together the butter, cream, powdered sugar, brewed coffee and vanilla essence, till thick peaks form.

Refrigerate till further use.

To assemble :

Place the cooled cake on a cake stand or a plate. Coat the cake top with frosting. Pour chocolate sauce over it and sprinkle with chocolate sprinkles or sprinkles of your choice.

Serve.
