Pad Thai, you stole my heart ! β€
This delicious, flavorful Thai food is almost surreal ! I was sceptical about trying to create this delectable Thai food at home. Then came a belated Diwali gift box full of various Thai pastes, and ingredients…………..and Pad Thai is just the first one i tried π
It seems I will be creating history of Thai food in an Indian kitchen π
Here’s what I did………..
INGREDIENTS
Makes for 2 persons
100 gms – Thai rice noodles
6-7 nos – tiger prawns
1/2 cup – roughly chopped spring/ green onions
1/2 tsp – finely chopped green chili
1/2 tsp – finely chopped garlic
1 nos – red apache pepper
1 tsp – fish sauce
1 tsp – soy sauce
1 tbsp – roughly torn or chopped coriander
1 tbsp – pad thai sauce/ paste (readymade)
3 cups – water
1 tsp – lime juice (optional)
1 tbsp – oil
salt to taste
METHOD
Bring water to boiling point and take it off fire. Soak the noodles for 20 mins. Cover and keep aside.
Cut the red chili lengthwise and de-seed.
Heat oil in a wok. Temper with garlic. Once it turns fragrant, add the onion, red and green chili. Sprinkle some salt. Saute but do not fry for 2 mins. Drain the onion out of the oil and keep aside.
In the remaining oil, add the prawns. Saute them till they turn pink. Add 1 1/2 tbsp pad thai paste and fish sauce. Toss it well. The sauce will gradually thicken more and coat the prawns. Sprinkle some salt.
Drain the rice noodles. Keep it in the colander till all water drains out.
Assemble by laying a bunch of noodles. Arrange the fried onion and chilies over the noodles. Pour soy sauce over it. Now arrange the prawns on this prepared bed. Garnish with fresh coriander.
Serve.
