Gajar -matar / Carrot -peas stir fry

Gajar – matar or carrot and peas are much loved vegetable in Indian households during the winters.

I usually cook it sauteed to maintain the crunch of the vegetables. (It goes well with a few pegs) ๐Ÿ˜›

Presenting here Gajar -matar/ carrot peas stir fry from Winter Platter 3.

gajar -matar/ carrot -peas stir fry

Here’s what I did…………..

INGREDIENTS

1 cup – chopped carrots

1/4 cup – shelled peas

1 nos – roughly chopped medium sized onion

1 nos – finely chopped green chili

1 tsp – oil

1/2 tsp – grated ginger

1/2 tsp – black pepper powder

pinch of cumin seeds

salt to taste

METHOD

Heat oil in pan and temper with cumin seeds. Add the onion, ginger and green chili and fry till soft. Add the carrot and peas, salt and cover. Cook on a low flame till the vegetable softens.

Add the pepper powder and increase the flame. Stir well and cook till moisture dries up.

Serve hot with chapati or any other flat bread.
