Winter Platter 4 – Republic Day special

Saare jahan se accha, Hindustan hamara…………….an ode to Hindustan(India), penned by Iqbal, became the war cry for all Indians against the British rule.

India celebrates it’s 66th Republic day, today and we have Barack Obama, President of United States as our chief guest of honor.

Presenting my ode to Republic India through my food, Winter Platter 4 – comprising of Bhapa Chingri / Steamed prawns in curry, Lau diye bhaja Moog dal/ Roasted split green grams, Gobhi -matar sabji / Cauliflower -peas stir fry and Dhone pata r bora/ Fresh coriander fritters.

Celebrating this Republic Day with food and some wine πŸ˜‰

Bhapa Chingri / Steamed prawns in curry and Gobhi -matar sabji / Caulifloer -peas stir fry will follow in a separate post.

For Lau diye bhaja Moog dal follow the recipe here, replace raw papaya with lau. Lau means bottle gourd.

Here’s what I did………….

INGREDIENTS

Dhone pata r bora / Fresh coriander fritters

1 bunch – fresh coriander (100 gms)

3 tbsp – chickpea flour / besan

1 nos – finely chopped green chili

pinch of carom seeds / ajwain

water as required

salt to taste

oil to deep / shallow fry

METHOD

Wash the fresh coriander, thoroughly. Roughly chop the leaves and stalks, all together.

In a bowl, mix chopped coriander, green chili, carom seeds. Add water to make a thick batter, more like a paste. Season with salt.

Heat oil and drop this batter one spoonful at a time. Fry till golden brown on a medium flame.

Serve hot.

Note : * This makes a good snack, as well.
