There is something unique about the aroma of curry leaves aka kadhi patta. Quite obviously, I love it 😉
Every few months, I dry bunches of these leaves, slightly roast it in a pan, grind it to a fine powder and store it in an airtight container for future use. For more shelf life, store in the refrigerator.
Presenting, Potatoes with curry leaves powder from That Moody Thali.
Here’s what I did………….
INGREDIENTS
4 -5 nos – boiled potatoes
1 nos – green chili, halved length wise (optional)
1/2 tsp – tumeric powder
1/4 tsp – chili flakes
1/4 tsp – carom seeds (roughly crushed)
1/2 tsp – roasted cumin powder
1 1/2 tsp – curry leaves powder
2 tsp – oil
pinch of mustard seeds
pinch of hing /asafoetida
salt to taste
METHOD
Peel the potatoes and dice them as per your choice.
Heat oil in a pan and temper with asafoetida and mustard seeds. Add the potatoes and stir fry them for a couple of mins. Add the chilli flakes, tumeric and green chili. Add salt and stir fry for another couple of mins.
Add the crushed carom seeds, curry leaves powder and roasted cumin powder. Stir and blend them well for a min.
Take it off fire
Serve hot.
Note : * This is a simple and plain curry leaves powder, not the south Indian chutney podi.
