I was looking were some inspiration. Yeah I do that quite often πŸ˜‰

This huge bunch of fresh coriander, mint and couple of raw mangoes were stuffed in the crisper. Temperature is soars to 45 degrees C :/ and I knew, even in the crisper the coriander will start wilting within a few days. So, making chutney was an option, but what more ??

Here came the spark !! πŸ˜›

The journey and execution of Egg curry with coriander and raw mango !!

As I am not fond of cooked mint taste, hence omitted.

The result was a lip -smacking, finger licking curry. (blowing my own trumpet, is so passe) πŸ˜›

Here’s what I did………..

INGREDIENTS

2 -3 nos – hard boiled eggs

2 cups – chopped fresh coriander

1 nos – medium sized raw mango

2 nos – green chili

2 tbsp – finely chopped onion

1/2 tsp – ginger paste

1/2 tsp – garlic paste

1/2 tsp – tumeric powder (optional)

1/4 tsp – red chili powder

1 tsp – cumin powder

1/4 tsp – garam masala

1 tsp – sugar

1 nos – bay leaf

1″ stick – cinnamon

1/2 tbsp – oil

1/4 cup – water

pinch of cumin seeds

salt to taste

METHOD

Peel, wash and roughly chop the raw mango.

Grind together , the mango, coriander and green chilies, to a paste.

Combine the tumeric (optional), cumin, red chili powder in 1/4 cup of water.

Heat oil in a pan. Peel the eggs and saute them for 2-3 mins. Take the eggs out and drain them on kitchen paper.

In the remaining oil, temper with bay leaf, cinnamon stick and cumin seeds. Tip in the chopped onion and fry till translucent. Add the ginger and garlic paste and fry for another min. Pour in the water soaked spices and the sauteed eggs. Prick the eggs in few places. Sprinkle some salt and cook till the spices get aromatic and releases oil.

Add the fresh coriander and raw mango paste. Adjust salt and sugar. Lower the heat, cover and cook till moisture dries up and the curry has a thick consistency. Sprinkle the garam masala and give a curry a good stir.

Take it off fire.

Serve hot with plain boiled rice or chapati.

    Yummy, the secret ingredient has to be the raw mango. Love egg curry, my Mum used to crack an egg and drop it in the curry sauce, but I’ve seen others use the hard-boiled variety. I’ve got to try this, the gravy looks delicious πŸ™‚
