Didn’t i confess earlier that we Bengalis strongly believe in ‘No Wastage’ ? 😉 We can just about cook every part of a vegetable, plant, fruit, fish etc etc etc 😛
Jokes apart, stir fry of peels etc leads us to the culinary delights of a widow’s kitchen. Until the early twentieth century, the plight of the Bengali widows is a topic for a Doctorate. So vast and so deep !! But those very kitchens gave us the best vegetarian food and the skills to use peels etc in an interesting and innovative manner. End result ?? Lip – Smacking ! ❤
Presenting here is crispy stir fried potato peels, served as appetizer with plain hot boiled rice. I, ofcourse, use it for snacking too 😉 with a good cup of tea 😀
Next time, do not throw away the peel 😉 Use it for this crunchy bite.
Here’s what i did………..
INGREDIENTS
1 cup – finely chopped potato peels
1/2 tsp – poppy seeds
1 tsp – vegetable oil
pinch of nigella seeds
salt to taste
METHOD
Wash the peels, bunch them together and finely chop them.
Heat oil in a wok and temper with nigella seeds. Add the chopped peel. Stir fry for 2 -3 mins on medium heat. Add salt and poppy seeds. Cook for another 2 mins, constantly stirring.
Take it off fire and serve with steaming hot rice.
Happy cooking !! 🙂
Cheers!! 😉
